These cuts come off our older cows, what we call cull cows. They are not what we would class as a prime steak, and we are not going to tell you otherwise. What they are is fatter. That fat is the whole point. They cook up richer than a lean cut ever will, they are still plenty tender, and the sizes run consistent across the box.
