Trail Boss Steak Box

Twelve steaks. Three ribeyes, three New York strips, three top sirloins, three tenderloins.

This is the box I build when I want my own freezer stocked for the season. Not a sampler, not a gift box. Twelve steaks that get you through a couple months of grill nights without thinking about it.

What's inside:

• 3 Ribeye steaks
• 3 New York strip steaks
• 3 Top sirloin steaks
• 3 Tenderloin steaks

8 pounds minimum, frozen and vacuum sealed.

A word on these cuts. They come off our older cows, what we call cull cows. They are not what we'd class as a prime steak, and I'm not going to tell you otherwise. What they are is fatter, and that fat is the whole point. They cook up richer and more flavorful than a lean cut ever will, and they're still plenty tender. Sizes run consistent across the box.

How we cook them:

Salt them well. Get the grill hot. Pull them at rare to medium rare and let them rest. Don't overthink it. These do not need a marinade and they do not need much of anything else.

This is a limited release. We only run so many cull cows a year, so when these are gone they're gone until late next summer.

100% grass fed and grass finished. No antibiotics, no hormones. USDA inspected. Raised on our 320 acres in Eureka, Nevada.
