Ordered a 6 lb brisket. My first order. Very impressed with the packaging and delivery. Brisket was lean, no trimming of fat required. Rubbed and slow cooked with hickory smoke to 205 degrees, wrapped in paper and rested for 1 hour. Had dinner with 5 people...the brisket was the star of the meal. I'll be ordering from Miller Bkson again.

The brisket itself is absolutely gorgeous. Unfortunately it sits in the freezer with two other beef briskets that I have yet to cook. However my next brisket will be your bison

The cut worth planning a Saturday around

Bison brisket is the same legendary muscle as beef brisket on a leaner, wilder animal — same deep flavor, same low-and-slow soul, noticeably less fat and a faster cook. It rewards the pitmaster who pays attention and forgives the home cook who braises.

Because it's leaner than beef brisket, the playbook shifts: expect a shorter cook, wrap earlier to guard moisture, and chase probe-tenderness instead of the clock. No smoker? A Dutch oven braise is the low-stress route and turns out silky every time. We wrote a full guide to the cut on our blog.

Like everything we sell, it comes from our own grass-fed, grass-finished herd in Eureka, Nevada — vacuum-sealed, shipped frozen, free shipping. And a heads-up: each animal only has one, so when the season's briskets are gone, they're gone.
